The Artichoke originates from North Africa and is cultivated in France (Brittany, for example, where they are the largest).
During the first year of growth, very large leaves appear, the ones we use. In the second year, the plant produces a sturdy stalk that can grow up to 1.50 m high, followed by the Artichoke flower, the part we eat as a vegetable.
It has been appreciated since the time of the Pharaohs, who offered it to their gods. It was developed by horticulturalists during the early Italian Renaissance and introduced to France during the Italian wars.
Its virtues have been exploited since the 16th century, when it was used as a sovereign remedy against jaundice. Artichoke is renowned for promoting healthy liver function, and is traditionally used to improve elimination and digestion.
