The almond tree belongs to the Rosaceae family. Its fruit contains one or two Almond kernels with an oil content of between 50 and 65%. Only the Sweet Almond is edible, the bitter variety being toxic. Originally from Asia, the Almond has been grown all around the Mediterranean since the Middle Ages.
