Shiitake has been cultivated in China and Japan for around 2,000 years. A mushroom of longevity, the Japanese call it "the samurai's mushroom" because it was reserved for the emperor and his followers. The Chinese call it the "Elixir of Life" for its nutritional and stimulating properties.
- Until recently, maitake could only be gathered in the wild. Given the high value of this mushroom, it is said that those who found it "danced for joy" when they discovered it, hence the nickname "dancing mushroom".
- The reishi or 'Lingzhi' has enjoyed an uncommon reputation in Asia for over 2,000 years. Chinese tradition recommends the flesh of this mushroom as a valuable tonic for Qi (pronounced Chi), the vital energy that sustains the whole body.
These three mushrooms are grown in pots on a substrate of hemp, sawdust and organic wheat bran in a mushroom farm using Japanese methods.
